The Settlement Home
The Settlement Home is a place for children and teens who have experienced trauma and are in need of a placement due to various criteria. During my time here I worked with another dietetic intern to provide nutrition education and cooking classes for the girls.
Tasks completed:
- Documented needed to comply with National School Lunch Program in the cafeteria
- Created and provided nutrition classes over portion control, hydration, smart snacking, herbs, and the importance of trying new foods
- Demoed recipes for fruit infused water, energy bites, and tea
- Taught cooking classes for 3 different group homes with themes chosen by the girls including recipes such as miso soup, teriyaki chicken, caramelized fruit, rice krispie treats, flatbread pizzas, and buffalo cauliflower bites
